100% dwelling milled grain boules w/ Outdated Dough/ crumb pics added


I bought Hourani wheat berries from Honore’ Mill in California. That is an historic durum wheat first present in Masada Fortress  Israel in stone jars. This can be a thriving mill constructed solely on dedicated people believing of their neighborhood. 

The grain is gorgeous and large berries. It’s a thirsty flour. It’s incredible to work with. I used 1/3 Hourani, 1/3 Danko Rye from Barton Springs Mill  and 1/3 Rouge de Bordeaux additionally BSM. 

I added 150g previous dough that had been added to my saved starter and fed this combo . As occurs every time I’ve added previous dough the levain construct actually bubbles  actively and I can see it really getting greater as I watch , after a pair hours ! It’s superb.

550g water

42g every — EVOO, yogurt, honey

130g energetic levain 

15g kosher salt.

 
That’s it. May be decreased to 1400g whole weight and bake very efficiently in 13” Pullman . 
No shaping per se. Dump out divide in half roll every half gently right into a fats tube don’t deflate  and spherical gently place in banneton . No scoring let pure fissures type.
