For the Rooster:

  • 1 (4-5 pound) rooster, butterflied
  • 4 tablespoons ghee, at room temperature
  • 23 tablespoons contemporary thyme
  • 1 1/2 teaspoons Celtic sea salt, divided
  • 1/4 teaspoon freshly floor black pepper

For the Onions:

  • 2 giant pink onions, lower into wedges
  • 1 tablespoon ghee, melted

Directions

  1. Preheat oven to 450°F and alter oven rack to medium place.
  2. Pat rooster with a dry fabric to verify the pores and skin is dry. Stir collectively softened ghee (clarified butter), thyme, and 1 teaspoon sea salt in a small bowl.
