Directions
Step 1
Deliver a big pot of water to a boil. Add the hearts of palm, return to a boil, then flip the warmth to medium-low and simmer till tender, 30–40 minutes. Reserve ⅔ cup of the cooking liquid, then drain and switch to a big bowl. (If utilizing canned, reserve ⅔ cup of the liquid, then drain and chop the hearts.)
Step 2
To the bowl, add the reserved cooking liquid, the crab, flour, baking powder, egg, onion, and 1 teaspoon of salt and toss gently to mix.
Step 3
Into a big pot fitted with a deep-fry thermometer over medium-high warmth, pour 3 inches of oil. When the temperature reaches 375°F (or when a little bit of batter dropped into the pot floats and sizzles), working in batches, drop tablespoonfuls of the batter into the oil. Fry, stirring gently about midway by way of, till the fritters are golden brown, about 3 minutes per batch. Switch to a paper towel-lined plate and sprinkle with salt. Deliver the oil again to temperature between batches.
Step 4
Serve sizzling with lime wedges, sizzling sauce, and ketchup.
