Hummingbird Cake Recipe – Gretchen’s Vegan Bakery


Throwback to the late 1970’s Hummingbird Cake has not too long ago regained reputation

Mentioned to be of Jamaican first rate then referred to as the Dr. Chicken Cake owed to the Purple-billed Streamertail hummingbird native to the island.
It’s stated that the truffles sweetness is sufficient to appeal to hummingbirds simply as they’d be interested in nectar.

Fluffy layers made with Banana, Pineapple, Pecans and a touch of orange in mine!
Paired up with my well-known “No Cream Cheese” Icing recipe!

Notes for Success

The recipe makes 3 layers of seven″ cake or 2 thicker 8″ layers

Monk fruit sugar (or your favourite sugar substitute) for half of the sugar listed does wonders for the energy on this one!
Moreover I’ve applesauce listed for half of the oil however should you choose all oil ~ be my visitor!

My hummingbird cake just isn’t too candy! Fluffy layers made with Banana, Pineapple, Pecans and a touch of orange in paired up with my well-known 2-2-2 icing!

Prep Time 2 hours

Prepare dinner Time 35 minutes

Complete Time 2 hours 35 minutes

Components  

  • ½ cup Vegetable Oil 118ml
  • ¼ cup Applesauce 60g
  • ½ cup Plant Milk
  • 1 cup Brown Sugar 200g
  • 1 cup Ripe Banana 250g
  • cups All Goal Flour 400g
  • 2 teaspoon Baking Powder
  • 2 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Floor Cinnamon
  • ½ teaspoon Nutmeg
  • 1 cup Crushed Pineapple Drained
  • 1 Tbs Orange Zest
  • 2 Tbs Orange Juice
  • 1 cup Toasted Pecans

Directions 

  • Preheat the oven to 350F & put together your cake pans with grease & parchment paper lining

  • In a big bowl mix the sugar, oil, mashed banana, applesauce, plant milk, orange juice & zest & salt whisk easy

  • Then sift collectively the entire dry substances straight into the bowl & whisk easy

  • Fold within the drained pineapple & pecans

  • Pour batter into your ready cake pans & bake for about half-hour relying on the dimensions of your pans. Or till the truffles are springy to the contact once you gently press the facilities
