After a number of wet days and a few sunshine the kitchen backyard is flourishing. The lettuce appears beautiful and it’s time to start out selecting. However with temperatures so low, I’ve no need to eat salad.
Crushed almonds give the soup a creamy consistency with none dairy. Made with vegetable inventory or water, the soup is a nourishing vegetarian dish. For my rendition, I used selfmade rooster inventory and completed the soup with poached egg.

Lettuce Soup
Sopa de Lechuga
Overwhelmed eggs might be stirred in to thicken the soup or, alternatively, one egg per individual might be poached within the soup. Serve the soup with bread which might be damaged up into the soup, as desired.
Serves 4.

3-4 tablespoons olive oil
1-2 slices bread
¼ cup blanched almonds
2 cloves garlic, flippantly crushed to separate the skins
1 medium onion, chopped
1 leek, chopped
4 cups chopped or shredded lettuce
6 cups rooster or vegetable inventory or water
Salt to style
Freshly floor black pepper
Chopped ham (optionally available)
2-4 eggs
Sprigs of contemporary mint

Warmth 3 tablespoons of the oil on medium-high in a pan. Fry the bread, almonds and garlics till they’re golden. Skim them out. Discard garlic skins and place the garlics in a blender container with the bread and almonds. Reserve.
Add the onion and leek to the pan with extra oil, if wanted. Sauté them gently till softened, 4 minutes. Add the lettuce and sauté till lettuce is wilted. Add the inventory or water, season to style with salt and pepper. Deliver to a boil, cowl, and scale back warmth. Prepare dinner 20 minutes.
Ladle among the broth from the pan into the container with the fried bread, almonds, and garlic. Let it stand 5 minutes to melt the bread, then mix till easy. Pour the combination into the pan. Add ham, if utilizing. Prepare dinner 5 minutes.
Stir 2 overwhelmed eggs into the soup or break 4 eggs into the soup and poach them till whites are set and yolks nonetheless runny.
Ladle soup and eggs into bowls and serve the soup garnished with mint sprigs.
